KARELA WITH SOYA GRANULES
Not everybody is fond of karelas, but the ones who are would love this recipe as it tastes different and is healthy at the same time. There is a secret ingredient which I put which enhances the taste of the karela and one won’t stop licking his fingers.
INGREDIENTS (serves 2)
4-5 karela
Salt
Coarsely powdered saunf (anise) – 1 tsp
Nigella seeds (Kalonji)- 8-12 seeds
Fenugreek seeds (Methi dana)- 4-5 seeds
Water
Green chillies – 1 slit
Turmeric powder (haldi) – 1 tsp
Onions-1 big chopped finely
Red chilli powder (lal mirch)
Dreid Mango Powder (Amchoor) – 1 ½ tsp
Garam masala
Cumin seeds(Jeera) 1 tsp
Cumin powder (jeera powder) 1 tsp
Mustard oil (sarson ka tel)- 2 tbsp.
Soya granules- 1 cup
Kadi patta
METHOD
1. Grate the karelas roughly, and cut them in rings.
2. Add good amount of salt and keep it covered overnight.
3. Squeeze the karelas in the morning, such that all the water is drained out.
4. Keep aside. Soak the soya granules for about 10-15 mins in water.
5. In a kadai (pan) , put mustard oil. Add kadi patta, green chilly, cumin seeds, Nigella seeds and Mustard Seeds and stir fry for a few minutes.
6. Now add onions and cook till they are light brown in colour. Now add all the other masalas’ and mix well. Cook for about 2-3 mins.
7. Add soya(without water) and the karelas mix well and cook without water until they become a little crisp.
8. Now keep adding water to steam the karelas and simmer on low flame. Cover with lid.
9. Cook till the karelas become soft.
10. Serve hot with rotis or parantha.
Tip: After you squeeze the water from the karelas, you can pressure cook it for 2 whistles on high flame. This will save you time in cooking on the non stick as they’ll, become soft quicker.
